<li>1/4 cup Milk</li>
<li>1/2 tsp Salt</li>
<li>4 cup Plain flour</li>
<li>2 tbsp Self raising flour</li>
<li>4 tbsp Sugar</li>
<li>2 tbsp Yeast</li>
</ul>
<h2>Method</h2>
<ol>
<li>In a bowl, mix together 2  tbsp of self raising flour, 2 tbsp of yeast, and 2 tbsp of sugar and 3 tbsp of Luke warm water. Leave aside for 4 -5 minutes.</li>
<li>In a separate bowl mix the plain flour with 1/4 cup powdered milk, 8 tbsp yeast, and water. Knead for 10 minutes till smooth dough is formed. Brush it with oil, cover and leave aside for 45 minutes.</li>
<li>Press the dough with your hands and divide into six rolls. Grease a griddle.</li>
<li>With the help of a rolling pin, roll out the 6 balls of dough. Place each disc onto the griddle, and brush oil on top. Place the taftan in an oven for 30 minutes.</li>
<li>Then place the griddle on a low flame and cook the taftan until it turns golden brown. Flip over and cook the other side.</li>
<li>Brush oil and water l on top of each taftan and serve.</li>

<p><strong>For the dough</strong></p>
<ul>
<li>Flour                                       250g</li>
<li>Eggs                                        2</li>
<li>Milk                                        1/2cup</li>
<li>Granulated yeast                              1tbsp</li>
<li>Butter                                      3tbsp</li>
</ul>
<h2>Method</h2>
<ol>
<li>Stir in 1tbsp of granulated yeast in ½ cup milk .</li>
<li>In a separate bowl mix the flour with the milk and yeast mixture Add 2 beaten eggs, salt as required, 3tbsp butter and water as required.</li>
<li>Knead to form a smooth dough .Cover with a plastic wrap and leave the dough until it doubles in volume.</li>
<li>In the meantime slice the chicken breast .Heat 3tbsps oil in wok and fry 3 cloves of garlic and chicken strips. Fry until the color of the chicken and garlic changes.</li>
<li>Add ½ cup tomato paste, salt a srequired,1/2tsp black pepper powder,1tbsp oregano,1tbsp crushed red chilies and ¼ bunch chopped parsley  Mix well</li>
<li>Roll out the dough with a rolling pin and place on a greased pizza mould. Brush the edges of the base with a beaten egg.</li>
<li>Spread the chicken and tomato sauce on the pizza base. Top with chopped onions, and grated mozzarella cheese.</li>
<li>Bake at 190C for 12- 15 minutes or until golden brown.</li>

<li>Finely chop 4 boiled potatoes and 1 red capsicum.</li>
<li>In wok heat 3 tbsp oil, add 1 chopped onion and 3 – 4 cloves of crushed garlic.</li>
<li>Fry well till onion is tender.</li>
<li>Now add chopped capsicum and potatoes.</li>
<li>Beat 3 eggs in a bowl, add 1 tbsp chopped mint leaves and salt to taste. Now add beaten egg to the wok and cook on low flame.</li>
<li>Remove egg mixture in an oven proof tray. Spread top with ½ packet of grated mozzarella cheese.</li>
<li>Bake in a preheated oven on 200 degrees for 5 – 6 minutes.</li>
<li>Remove from oven and serve hot.</li>

<ol>
<li>Finely mash ½ kg potatoes, add in salt to taste and ½ tsp black pepper. Mix well.</li>
<li>Blender together ¼ bunch of coriander leaves, ¼ bunch of mint leaves, 3 tbsp desiccated coconut, 4 – 5 green chilies and 3 tbsp tamarind pulp.</li>
<li>Boil 4 eggs and cut all of them from centre.</li>
<li>Remove egg yolks and keep aside.</li>
<li>Mix egg yolks with blended green mixture, again fill in boiled egg shells.</li>
<li>Cover egg with boiled mashed potato.</li>
<li>Dip in beaten egg and roll in 1 cup bread crumbs.</li>
<li>Lastly deep fry till golden brown and crisp.</li>
<li>Cut into two and serve hot.</li>

<li>Oil                                3 tbsp</li>
<li>Garlic paste               1 tsp</li>
<li>Salt                               to taste</li>

<p><strong>Ingredients for Dough</strong></p>
<ul>
<li>Flour                            250 gm</li>
<li>Salt                               to taste</li>
<li>Yeast                            1 tbsp</li>
<li>Butter                          3 tbsp</li>
<li>Milk                             ½ cup</li>
<li>Egg                               1</li>
<li>Water                          little</li>
</ul>
<h2> Method</h2>

<ol>
<li>In chopper put together 250 gm mince, 1 chopped onion, 2 – 3 green chilies, 1 capsicum and 1 egg. Chopperize well.</li>
<li>In a wok heat a little oil, add in chopperize mince and fry well. Remove from fire and keep aside.</li>
<li>Heat 3 tbsp oil in another pan, add 1 tsp garlic paste, 1 tbsp crushed red pepper, ½ tsp oregano and ½ tsp thyme. Fry for few seconds.</li>
<li>Now add ½ cup tomato paste and cook for 1 – 2 minutes.</li>
<li>For making dough dissolve 1 tbsp yeast in ½ cup lukewarm milk.</li>
<li>Mix together 250 gm flour and dissolved yeast mixture, also add 1 beaten egg, 3 tbsp butter, salt to taste and knead to dough with water as required.</li>
<li>Cover with a plastic and keep aside for 10 – 12 minutes.</li>
<li>Spread dough in a greased pizza pan, top with prepared pizza sauce.</li>
<li>Spread fried mince on top. Sprinkle with ¼ bunch of chopped parsley.</li>
<li>Put tomato cubes on top. Cover with grated mozzarella cheese.</li>
<li>Sprinkle top with a pinch of oregano.</li>
<li>Brush edges with a little butter and beaten egg.</li>
<li>Lastly bake in a preheated oven on 200 degrees for 10 – 12 minutes.</li>

<li>Water 1 cup</li>
<li>Tamarind pulp ¼ cup</li>
<li>Oil ½ cup</li>
<li>Mango pickle  50 gm</li>
<li>Turmeric 1 tsp</li>
<li>Fennel seeds 1 tsp</li>
<li>Crushed red pepper 1 tsp</li>
<li>Chili powder  1 tsp</li>
<li>Cumin crushed  1 tbsp</li>
<li>Coriander crushed  1 tbsp</li>
<li>Ginger garlic paste  1 tbsp</li>
<li>Mustard seeds ½ tsp</li>
<li>Onion seeds ½ tsp</li>
<li>Fenugreek seeds ½ tsp</li>
<li>Salt to taste</li>
</ul>

<h2>Method</h2>
<ol>
<li>Heat ½ cup oil in a pan, add 1 tbsp ginger garlic paste, ½ tsp mustard seeds, ½ tsp onion seeds, ½ tsp fenugreek seeds, 1 tsp fennel seeds, 1 tbsp cumin seeds and 1 tbsp crushed coriander seeds.</li>
<li>Fry for few seconds.</li>
<li>Now add 1 chopped onion and fry till soft.</li>
<li>Also add 3 chopped tomatoes and ¼ cup tamarind pulp.</li>
<li>Finely chop 1 bottle gourd and add to the pan. Fry for 1 – 2 minutes.</li>
<li>Now add a few curry leaves, 1 tsp turmeric, salt to taste, 1 tsp crushed red pepper, 1 tsp chili powder and 1 cup water. Cook for 1 – 2 minutes.</li>
<li>Add 150 gm boiled gram lentils and simmer for 8 – 10 minutes.</li>
<li>Lastly add 50 gm mango pickle, ¼ bunch of coriander leaves and 3 – 4 chopped green chilies.</li>
<li>Fry well over high flame, dish it out and serve.</li>

<h2> Method</h2>

<li>Boil ½ packet egg noodles and then fry with oil.</li>
<li>Remove and keep aside.</li>
<li>Cut ½ kg chicken into strips, marinate with 2 tbsp corn flour, salt to taste, 1 tsp crushed black pepper and half beaten egg.</li>
<li>Mix well and deep fry till golden brown.</li>
<li>Heat 2 tbsp oil in a pan, add 4 – 5 cloves of chopped garlic and fry well.</li>
<li>Now add 2 tbsp lemon juice, 4 tbsp chili sauce, 1 chopped carrot, 1 chopped capsicum, 2 chopped spring onion, 2 tbsp brown sugar and fried chicken.</li>
<li>Cook well. Spread on top of boiled noodles and serve.</li>

<h2>Method</h2>
<ol>
<li>Boil 25 gm white lentils and keep aside.</li>
<li>Beat 2 eggs in a bowl.</li>
<li>Heat 4 tbsp oil in a pan, add beaten eggs, boiled lentils, 1 chopped onion, 1 chopped tomato, 3 – 4 green chilies, coriander leaves and salt to taste.</li>
<li>Mix well and cook till done.</li>
<li>Dish it out and serve.</li>

<li>Nutmeg mace ground ¼ tsp</li>
<li>Gram flour  2 tbsp</li>
<li>Salt to taste</li>

<h2>Method</h2>
<ol>
<li>Grate 2 potatoes and keep aside.</li>
<li>In chopper put together 300 gm mince, 1 egg, 2 tbsp gram flour, 1 chopped onion, ¼ bunch of coriander leaves, 1 spring onion, 3 green chilies, 4 – 5 cloves of garlic, 1 piece of ginger and 1 bread slice. Chopperize well.</li>
<li>Now add ¼ bunch of mint leaves, 1 tsp crushed red pepper, 1 tbsp cumin seeds, 1 tbsp coriander seeds, ½ tsp all spice, ¼ tsp ground nutmeg mace, 2 tbsp gram flour and salt to taste.</li>
<li>Chopperize for 1 minute.</li>
<li>Remove mixture in a bowl.</li>
<li>Add in grated potatoes. Mix well.</li>
<li>Make patties with the mixture.</li>
<li>Now shallow fry kabab with oil as required.</li>

<li>Yogurt  125 gm</li>
<li>Dill chopped  ½ bunch</li>
<li>Coriander leaves  ¼ bunch</li>
<li>Oil  ¼ cup</li>
<li>Green chilies  2 – 3</li>
<li>Turmeric  1 tsp</li>
<li>Chili powder  1 tsp</li>
<li>Crushed red pepper  1 tsp</li>
<li>Dry fenugreek leaves  1 tsp</li>
<li>Ginger garlic paste  1 tbsp</li>
<li>Salt  to taste</li>

<h2>Method</h2>
<ol>
<li>Heat ¼ cup oil in a pan, add 1 tbsp ginger garlic paste and fry well. Now add 250 gm mince and fry till its color is changed.</li>
<li>Then add 125 gm yogurt, 1 tsp turmeric, 1 tsp chili powder, 1 tsp crushed red pepper and salt to taste. Fry for 1 – 2 minutes.</li>
<li>Now add 1 cup soaked yellow lentils, cover and simmer on low flame for 10 – 15 minutes until lentil is tender.</li>
<li>Remove lid, add 1 chopped spring onion, ½ bunch of chopped dill, ¼ bunch of chopped coriander leaves, 2 – 3 chopped green chilies, 3 chopped tomatoes and 1 chopped onion. Fry well.</li>
<li>Lastly add 1 tsp dry fenugreek leaves and salt to taste. Mix well, dish it out and serve hot.</li>
