Mix Vegetable Curry

IngredientsMix Vegetable Curry

  • Oil  ¼ cup
  • Fresh beans  250 gm
  • Onion chopped  1
  • Potatoes  2
  • Carrot sliced  2
  • Green chilies  2 – 3
  • Tomatoes boiled 4 – 5
  • Yogurt  125 gm
  • Peas   ½ cup
  • Coriander leaves  ¼ bunch
  • Turmeric   1 tsp
  • Coriander powder  1 tsp
  • Cumin powder  1 tsp
  • Chili powder  1 tsp
  • All spice powder 1 tsp
  • Ginger garlic paste  2 tbsp
  • Water  1 – 1 ½ cup
  • Salt  to taste

Method

  1. Heat ¼ cup oil in a pan, add 1 chopped onion and fry till golden brown.
  2. Now add 2 tbsp ginger garlic paste, 1 tsp turmeric, 1 tsp coriander powder, 1 tsp cumin powder and 1 tsp chili powder.
  3. Fry for few seconds.
  4. Now add 4 – 5 boiled chopped tomatoes and 125 gm yogurt. Cook for 1 – 2 minutes.
  5. Add 2 chopped potatoes, 2 sliced carrot, 250 gm fresh beans, ½ cup peas and 1 – 1 ½ glass of water.
  6. Cover and cook for 10 – 12 minutes.
  7. Then add 2 – 3 chopped green chilies, 1 tsp allspice powder, salt to taste and ¼ bunch of coriander leaves.
  8. Cook for 1 – 2 minutes.
  9. Dish it out and serve hot.
