Kashmiri Gushtaba

Ingredients:

  1. Boneless mutton ½ kg
  2. Kidneys fat50 gm
  3. Milk ½ liter
  4. Yoghurt 250 gm
  5. Khoya250 gm
  6. Ghee2 tbsp
  7. Fennel seed 1tsp
  8. All spice powder1 tsp
  9. Black pepper1 tsp
  10. Ginger paste½ tsp
  11. Coriander powder ½ tsp
  12. Sugar½ tsp
  13. Cardamoms ½ tsp

Method:

  1. Put the boneless meat and fat in a chopper and chopperize finely. Add cardamom powder, a little salt and 1 tsp ginger powder.
  2. After mixing well make round balls about 3 inches diameter. Heat oil in a large vessel, add salt, and one liter water.
  3. Add sugar, khoya, yogurt, all spice and salt to taste.
  4. Pour in the milk, add the koftas and simmeruntil the liquid evaporates and the koftas are very tender
