Hokkien Noodles

Hokkien Noodles

Ingredients:

  1. Oil 3 tbsp
  2. Egg2
  3. Garlic4 cloves
  4. Egg noodles½ packet
  5. Glass noodles½ packet
  6. Bean sprout1 cup
  7. Prawns 200 gm
  8. Chicken breast (juliennes)1
  9. Spring onion2
  10. Fresh red chilies3 – 4
  11. Cabbage¼ piece
  12. Capsicum1
  13. Lemon juice1 – 1 ½ tbsp
  14. Lemon skin½ tsp
  15. Saltto taste
  16. Black pepper powder½ tsp

Method:

  1. Heat 3 tbsp oil in a wok, add 4 cloves of chopped garlic and chicken breast cut into juliennes, sauté till golden brown.
  2. Now add 200 gm prawns and fry for 2 – 3 minutes. Then add 1 sliced capsicum, 2 sliced spring onions and ¼ piece of chopped cabbage.
  3. Fry well for 2 – 3 minutes.
  4. Beat 2 eggs and add to the vegetable mixture, do not mix and let it cook for a few minutes. Now flip the egg and cook the other side.
  5. Now add ½ packet boiled egg noodles, ½ packet soaked rice noodles, 1 cup bean sprout, salt to taste, ½ tsp black pepper, lemon juice, lemon skin and chopped fresh red chilies.
  6. Mix well, dish it out and serve hot.
