Caribbean Chicken Rice

IngredientsCaribbean Chicken Rice

  • Chicken breast                          2
  • Onion chopped                         1
  • Tomatoes chopped                  2
  • Green chilies                              3
  • Rice                                              300 gm
  • Crushed black pepper             1 tsp
  • Lemon juice                               1 tbsp
  • Butter                                          2 tbsp
  • Peanut butter                            3 tbsp
  • Chicken stock                            1 ½ glass
  • Salt                                               to taste

Ingredients for Marination

  • Garlic chopped                         2 cloves
  • Thyme                                         1 tsp
  • Lemon juice                               1 tbsp
  • Oil                                                 1 tbsp
  • Chili powder                              ½ tsp
  • Turmeric                                     ¼ tsp

Method

  1. Cut 2 chicken breast into strips, marinate with 2 tbsp oil, 2 cloves of garlic, 1 tsp thyme, ½ tsp chili powder, ¼ tsp turmeric and 1 tbsp lemon juice.
  2. Bake in a preheated oven on 200 degrees for 3 – 4 minutes.
  3. Now remove from oven and keep aside.
  4. Heat 1 tbsp oil and 2 tbsp butter in a pan, add 1 chopped onion and fry till onion is tender.
  5. Now add 2 chopped tomatoes, 3 chopped green chilies, salt to taste and 1 tsp black pepper. Mix well.
  6. Now add 3 tbsp peanut butter and 1 ½ glass of chicken stock. Cook till it comes to a boil.
  7. Add in 300 gm rice, cook till extra water dries, now add roasted chicken.
  8. Cover and simmer on low flame for 8 – 10 minutes.
  9. Dish it out and serve hot.
